This flatbread pizza is topped with delicious and crisp summer veggies and makes an effortless get it on the table quick meal.
I know Summer is still quite a while away but I am just dreaming of easy, serve yourself meals on the patio. Summer is by far my favourite season to cook in. Every meal is quickly thrown together so that I can get back outside.
The best meals are when I can head on out to the garden and just pick some produce off of a plant and bring it right into the kitchen.
What You Need to Make a Veggie Pizza
- Pizza Crust, Homemade or storebought
- Zuchinni
- Red Onion
- Cherry Tomatoes
- Feta
- Olive Oil
- Garlic
- Basil
- Red Pepper Flakes
How to Make Zuchinni and Feta Flatbread Pizza
If you are using homemade pizza dough, you will want to prepare it ahead of time and have it ready to go for this recipe. I like to batch make pizza dough and have it in the freezer so that when I am ready to make pizza, all I have to do is take it out of the freezer, let it come to room temperature and then go ahead making the recipe.
Whichever way you are making the pizza dough, follow the instructions given to you!
To start, begin by chopping and slicing your pizza toppings. For this flatbread pizza, we are using zuchinni, red onion, cherry tomatoes and feta.
Roll out your pizza dough onto a large, rectangular piece of parchment paper.
Drizzle the top of the pizza dough with olive oil. Sprinkle your salt and pepper across the top. Next, use a garlic press to crush a few cloves of garlic and spread them across the pizza.
Begin arranging your toppings. Start with the zuchinni, then the tomatoes, onions and finish by sprinkling across the crumbled feta.
Transfer your pizza onto a large baking sheet and place into a preheated oven.
Bake for 18-20 minutes
Before serving, add a few spring of basil to the top and sprinkle some crushed red pepper flakes across your pizza.
Right before eating, I like to drizzle some balsamic vinegar on mine. Yum!
Zuchinni and Feta Flatbread
Light and crisp crust topped with delicious summer vegetables!
Ingredients
- 1 Premade Pizza Dough
- 1/2 medium zuchinni, thinly slices
- 1/2 red onion, sliced
- 1 cup of halved cherry tomatoes
- 1 cup crumbled feta
- 2 tbsp olive oil
- 3 cloves crushed garlic
- 1 tsp salt
- 1/2 tsp pepper
- Basil (Optional)
- Crushed Red Pepper Flakes (Optional)
Instructions
- Preheat oven to 450°F.
- Begin by rolling our the pizza crust into a retangular shape on a piece of parchment paper.
- Brush crust with olive oil and cover with crushed garlic, salt and pepper.
- Arrange the topping, zuchinni, tomatoes, onion and feta, on the crust.
- Transfer parchment paper onto a large baking sheet.
- Place flatbread into the oven and bake for 18 to 20 minutes.
- Garnish with basil and red pepper flakes.
- Slice and serve hot!
