Chewy Chocolate Chip Cookies

We cannot argue with Cookie Monster. He is definitely the expert on all matters pertaining to cookies and since Home is Cookie, I have a chocolate chip cookie recipe that must be shared. I know. Chocolate chip cookies are probably beginning to feel a little old school but I truly believe that a classic cookie like this is timeless!

Moist and chewy chocolate chip cookies fresh from the oven are the perfect treat. They beat any boxed cookie or bag of chips out there. My kids will tell you that cookie day around here is the best day.

For this recipe, you will need flour, salt, brown sugar, white sugar, vanilla, baking soda, butter, 2 eggs and a lot of chocolate chip cookies. 

Begin by melting your butter in a microwave in a microwave safe bowl. When that has melted, add the butter and sugars into a stand mixer or large bowl and begin to cream them together, whisking on high. 

In another bowl, sift together your flour, baking soda and salt. Set that aside. 

Going back to your wet ingredients, add in the vanilla and eggs. You will need one full egg and one yolk for this recipe. 

Start adding your dry ingredients into the bowl with your sugars and eggs. When that has fully combined, pour in your chocolate chips. I’m using mini chocolate chips in this recipe but any size will do. 

Begin preheating your oven. While you are waiting, it is time to shape the cookies! Line 2 large baking sheets with parchment paper. To shape the cookies, take small bits of dough and roll them into balls about 1” in diameter and place them on the baking sheet. You will want to place them about 1” apart as they will expand during the baking process. 

When the oven has finished preheating, put your cookies inside the oven and bake for 10-12 minutes. Remove from oven and allow to cool slightly before serving. 

This recipe should yield about 3 dozen cookies. I store ours in the fridge and portion a few into the freezer. They will keep for 2 weeks in the fridge and up to 6 months in the freezer.

Ingredients

  • cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter melted
  • 1 cup brown sugar q
  • ½ cup white sugar
  • 1 tbsp vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2-3 cups chocolate chips

Instructions

  • Pre-heat oven to 375°F.
  • Sift together flour, baking soda and salt in a bowl.
  • In a seperate bowl, cream together melted butter and sugars.
  • Add in eggs and vanilla extract to your sugar and butter mixture.
  • Combine all ingredients.
  • Roll dough into 1" balls and place onto a baking sheet lined with parchment paper.
  • Bake at 375°F for 10-12 minutes.
