Pesto and Chicken Grilled Cheese Sandwiches

I have been loving all the fresh produce available near me lately! Is there anything better than tomatoes right off the vine and topped with some fresh picked basil? The answer is an obvious no. 

So what do you do with all that basil and all those tomatoes? One of my favourite summer meals right now are these pesto grilled cheese sandwiches with fresh mozzarella, homemade pesto, chicken and tomatoes. 

And since it is summer, what better way to cook it than right on the grill?

For this recipe, you will need a few loaves of sourdough ciabatta bread, sliced mozzarella and tomatoes, shredded chicken and a few tablespoons of pesto.

Slice your ciabatta loaves in half and spread your pesto onto each half. Start layering your toppings onto the bottom half of the bread. Begin with your chicken, then your tomatoes and finish with the cheese. 

Once your toppings are assembled, place the top half of the bread on to complete your sandwich. Transfer to a preheated grill. For Father’s Day this year, I got my husband a PitBoss Smoker. We have become obsessed with using it for literally everything! If you do not have a grill, an oven will work just fine. 

Close the lid of your grill (or oven) and wait. You’ll know your sandwich is done when the cheese begins to look very soft and slightly melted. Ours took roughly 10 minutes to finish. 

This is one sandwich that you will definitely not want to wait to eat!

Ingredients

  • 1 small loaf of ciabatta bread
  • 2 slices of tomatoes
  • 2 slices of fresh mozzarella
  • 2 tbsp fresh pesto
  • ½ cup shredded chicken

Instructions

  • Preheat your grill or oven to 375°F.
  • If your ingredients are not sliced, begin by slicing your bread, tomatoes and cheese.
  • Spread 1 tbsp of pesto onto each half of your bread.
  • Layer your ingredients onto the bottom half of your bread. Start with the chicken, then tomatoes and then the mozzarella cheese. Finish by placing your top slice of bread onto the sandwich.
  • Transfer your sandwich to your grill and close the lid.
  • Your sandwich is done when the cheese has begun to melt slightly.
  • Remove from grill or oven and enjoy!
