Vegetarian Sesame Chickpea Bowls

Can I tell you a secret? I used to be a vegetarian. Yep. It’s true! For a large period of time during college, I refrained from eating meat. Not because eating meat was bad but because I was convinced that I did not enjoy it.

The real problem was that I just didn’t know how to cook but I started to learned how to make some simple, yet delicious, meat alternatives when I began my first restaurant job.

One of my favourite things to make was chickpeas. I love chickpeas. Chickpeas roasted, on salads… There is no bad way to eat a chickpea.

Are Chickpeas Good For You?

Chickpeas are amazing from a nutrition standpoint. They are high in healthy dietary fibres to help aid in digestion. Chickpeas are very balanced when it comes to protein, fat and carbohydrates.

They are naturally gluten free so if you have a gluten intolerance or sensitivity, they are a perfect option.

This is why chickpeas became my go-to meat replacement.

What You Need to Make Sesame Chickpeas

  • Chickpeas
  • Toasted Sesame Oil
  • Chopped onion
  • Crushed garlic
  • Soy Sauce
  • Honey
  • Rice Vinegar
  • Ginger
  • Cornstarch
  • Vegetable Broth or Water
  • Sesame Seeds, for garnish
  • Green Onions, for garnish

How to Make Sesame Chickpeas with Rice and Steamed Veggies

Start by cooking your rice according to the instructions on the package. While the rice is cooking, prepare your veggies by adding a few inches of water to a large pot and placing the veggies inside in a steamer basket. Cover the pot and steam until veggies are tender.

Then, in a large saucepan, or wok, add in the crushed garlic, chopped onions, soy sauce, honey, rice vinegar, sesame oil, ginger and vegetable broth and 1 tablespoon of cornstarch to help thicken the sauce. Cook on medium to low heat until the sauce in shiny and has thickened.

Open the can of chickpeas, rinse them under cold water while straining off the liquid and add to the saucepan with the sauce. Stir until the chickpeas have fully coated with the sauce and cook for 10 to 15 minutes on low heat.

When the chickpeas are finished, serve over the rice and with the steamed veggies as a side.

Ingredients

  • 2 cans of chickpeas
  • 1 white onion, finely diced
  • 2 cloves of fresh garlic , crushed
  • 1 tsp fresh grated ginger
  • 2 tbsp toasted sesame oil
  • 1/2 cup low sodium soy sauce
  • 3 tbsp honey
  • 1 tsp rice vinegar
  • 1/2 cup vegetable broth
  • 1 tbsp cornstarch
  • Sesame Seeds, for garnish
  • Green Onions, for garnish

Instructions

Begin by heating up a large skillet.

Add in the toasted sesame oil, white onions, garlic and ginger. Saute the onions until soft.

Open the cans of chickpeas and rinse them well under cool water.

Add them into the skillet.

Begin adding in the remainder of the ingredients, the soy sauce, rice vinegar, honey, vegetable broth and cornstarch.

Stir well and cook on medium to high heat until the sauce has thickened and developed a shine to it.

Serve over rice with steamed vegetables and top with sesame seeds and green onions.
