Old Fashioned Canadian Poutine

Poutine is a Canadian classic. Crispy fries topped with salty cheese curds and topped with the most amazingly rich brown gravy.

I’ll be transparent here. As much as I love eating simple, whole foods that are the epitome of the all natural, healthy culture, I have a weak spot for french fries. You could say that I’m a bit of a connoisseur when it comes to what makes the perfect fry. I’m happy to admit to my addiction as long as you don’t try to separate me from a big plate of crispy fries!

You can serve just about anything with fries but as a Canadian, I cannot resist a classic poutine!

What Is Poutine?

Poutine is a classic Canadian dish of french fries that are topped with cheese curds and smothered in a rich brown gravy. It originated in Quebec but it’s popularity has taken over all of Canada!

What You Need to Make Old Fashioned Canadian Poutine

  • Potatoes
  • Butter
  • Flour
  • Beef Broth
  • Young Cheddar Cheese Curds
  • Salt and Pepper
  • Oil for Frying

How to Make Poutine

Begin by filling a pot with the oil and bring it up to temperature on high heat. If you have a thermometer, you will want your oil to be between 350°F and 375°F for optimal frying.

Gather your potatoes and cut them french fry style. You can wash and peel them first but I prefer to wash them after I cut them and leave the skins on.

Once the oil has reached the proper temperature for frying, drop a few handfuls of fries in at a time. Try not to over crowd your pot.

The fries will need 8-12 minutes per batch. You will know that they are fully cooked when they begin to float on top of the oil.

While the fries are cooking, begin to melt the butter in a small saucepan. Add in the flour and whisk together to create a roux. Pour in the beef broth and bring to a simmer. Whisk constantly to prevent the gravy from clumping together.

You want a nice, smooth and shiny gravy for your fries! Add in your salt and pepper to taste.

When the fries have finished cooking, remove them from the fryer or oven. Place a serving of fries on a plate and top with a good helping of the cheese curds.

Next, pour the gravy on top of your fries and enjoy!

Poutine makes an amazing meal just as is but there are so many ways you can dress it up and make it into an even heartier option. All you have to do is add a few of your most loved ingredients into the gravy!

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 tbsp butter
  • 1 tbsp flour
  • 2 cups of beef broth
  • 1 cup cheese curds
  • 6 russet potatoes
  • Oil for frying
  • Salt and Pepper to taste

Instructions

In a large pot, add in the oil for frying. Bring it up to a temperature of 350°F before beginning to fry the potatoes.

Wash and cut the potatoes "fry" style.

When the oil has reached a temperature of 350°F, drop in small batches of the french fries, taking care to not over crowd the pot.

While the fries are cooking, begin to melt the butter in a small saucepan.

Add in the flour and whisk together to create a roux.

Pour in the beef broth and bring to a simmer.

Whisk constantly to prevent the gravy from clumping together.

Salt and pepper your gravy to taste.

When the fries have finished baking, remove them from the fryer or oven.

Place a serving of fries on a plate and top with a good helping of the cheese curds.

Finally, pour the gravy on top of your fries and enjoy!
