Sourdough Strawberry Jam Tarts

When building a from-scratch pantry, it’s important to keep a few quick and easy recipes in your repertoire for when you’re out of time and snacks need to be made.

Tarts and pies are some of my favourite things to keep for snacks and desserts. During the Spring and Summer when fruit is easy to come by, I spend my afternoons making and canning delicious jams and pie fillings.

What is a jam tart?

A jam tart is a tasty treat made from your favourite jam inside a delicious, flaky pastry. Jam tarts are simple to make as they hold few ingredients and can be made quickly from pantry staples that you likely already have in your kitchen!

Strawberry jam

Cornstarch

How to make a sourdough strawberry jam tart

Start by preheating your oven to 350°F.

Next make the pie crust.

To make the pie crust, add the flour, starter, honey, salt and vinegar into a stand mixer. Then, add the cold, chopped butter into the mixer with the other ingredients.

Combine the dough using a paddle attachment. Mix on low speed until the dough is brought together in large crumbs. The dough should feel tacky and easy to work with.

Bring the remaining dough together using your hands.

Then, with a rolling pin, roll the dough out into roughly 1/8″ thickness. Use a large cookie cutter to cut the dough into discs.

Arrange the discs into a muffin pan.

In a bowl, whisk together the strawberry jam and cornstarch.

Fill each mini pie crust with the filling and then place the pan into the oven.

Bake the tarts for 30 to 35 minutes until the crust is golden brown.

Allow the tarts to cool slightly before serving.

Tips and tricks

Not a fan of strawberry jam? No problem! Homemade jam tarts can be made from from any of your favourite jams. Substitute strawberry jam for blueberry jam, peach jam, mixed berry or even apple sauce!

Store your strawberry jam tarts in the fridge for up to a week. You can also store them in the freezer for up to 6 months to save for a later date.

To reheat, simply bake them in oven for 10 to 12 minutes at 350°F.

Ingredients

For the pie crust

  • 1 1/2 cup flour
  • 1/2 sourdough starter
  • 8 tbsp cold, chopped butter
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tsp white vinegar

For the filling

  • 3 cups strawberry jam
  • 3 tbsp cornstarch

Instructions

Preheat oven to 350°F.

Notes

Store your sourdough strawberry jam tarts in the fridge for up to a week.

Freeze your tarts and reheat to use in the future. Your sourdough jam tarts will keep in the freezer for up to 6 months.

Try your other favourite types of jam, like blueberry, raspberry, mixed berry or apple butter instead of strawberry.
