Lilac Shortbread Cookies

These charming lilac shortbread cookies are made with beautiful lilac blossoms.

Directly outside the window of our study, we have 2 beautiful and fragrant lilac trees. When I was a little girl, my grandfather had one in the very back corner of his backyard and it was my most favourite tree.

As I got older, I became aware that lilac blossoms were in fact edible! Unfortunately, I didn’t know anyone at all who had a lilac tree who would let me pluck their blossoms and experiment with various recipes.

I was thrilled to finally have my very own lilac trees!

What You Need to Make Lilac Shortbread Cookies

  • Lilac Blossoms
  • Sugar
  • Flour
  • Butter

How to Make Lilac Cookies

Preheat your oven to 350°F/175°F.

Start of by picking the blossoms free of any stems and wash them under cool water.

Add them into the food processor along with the sugar and then blend them together to create a lilac sugar.

In a large bowl, add in the lilac sugar, flour and room temperature butter. Use a hand mixer to mix together the ingredients until they create a thich crumble.

Use your hands to roughly bring the crumbles together.

Place the dough between two sheets of parchment paper and roll out the dough until it has reached about 1/4″ thick.

Remove the top piece of parchment paper and use a cookie cutter to cut out the cookies.

Carefully place the cookies on a lined baking sheet and bake in the oven for 10 minutes.

When the cookies have finished baking, remove them from the oven and allow them to cool fully before serving.

Yield: 24 cookies

Ingredients

  • 2 cups flour
  • 1/2 cup room temperature butter
  • 1/2 cup white sugar
  • 1/4 cup lilac blossoms
  • 1/2 cup cornstarch

Instructions

  1. Harvest fresh lilac blossoms, free of visible browning and discolouration.
  2. Pick the blossoms free of all stems and wash under cool water.
  3. Preheat oven to 350°F/175°F.
  4. In a food processor, blend together the sugar and lilacs.
  5. In a large bowl, add the lilac sugar, cornstarch, flour and butter and mix using a hand mixer.
  6. Using your hands, bring the remainder of the dough together. It will be crumbly but will come together in the next step.
  7. Place the rough dough between two sheets of parchment paper and begin rolling out.
  8. Roll the dough until it is roughly 1/4" thick.
  9. Use a cookie cutter to cut out the shortbread cookies and place them on a lined baking sheet.
  10. Bake for 10 minutes.
  11. Remove the cookies from the oven and allow to cool fully before eating.
