Decadent Chocolate Sourdough Zuchinni Bread

I am calling this garden season My Zuchinni Redemption!

Last Summer I grew a total of two zuchinni plants that produced an outstanding total of two zuchinnis! These zuchinnis were about the size of really tiny cucumbers. It was really sad.

This year I planted a variety of zuchinni that are producing so many amazing fruits. Not just in flavour, but in size. You would not believe the size of the zuchinni that are coming out of my garden! Or maybe you would. The point is that they are gigantic!

But what do you do when you have preserved and eaten zuchinni with just about every meal for weeks? You start mixing things up.

I have had this recipe for Chocolate Zuchinni Bread sitting in my recipe cards for years now and have only made it a handful of times and definitely not since I began experimenting with sourdough. And I love finding new ways to experiment in the kitchen.

What You Need to Make This Recipe

  • Zuchinni
  • Sourdough Starter
  • Cocoa Powder
  • Flour
  • Brown Sugar
  • 3 Eggs
  • Butter
  • Vanilla Extract
  • Salt
  • Baking Soda
  • Ground Cinnamon

How to Make Chocolate Sourdough Zuchinni Bread

Preheat your oven to 350°F.

In a food processor, or using a cheese grater, grate your zuchinni. Use a cheese cloth to strain out any excess water from the zuchinni.

When all of the liquid has been strained from the zuchinni, transfer it into a bowl with the eggs, sourdough starter, butter, brown sugar and vanilla.

In a second bowl, combine the remaining ingredients. Then add the wet ingredients to the dry ingredients and mix together well using a whisk or hand mixer.

Pour the batter into a loaf pan that has been lightly greased with butter or olive oil.

Place the loaf pan into the oven and bake the zuchinni bread for 1 hour and 10 minutes.

To test done-ness, insert a toothpick or knife into the centre of the bread. When the toothpick comes out of the bread clean, it is finished baking.

Remove bread from the oven and and allow to cool before serving.

Yield: 1 Loaf

Total Time 1 hour 40 minutes

Ingredients

  • 2 cups grated zuchinni
  • 3 eggs, room temperature
  • 2 cups brown sugar
  • 1/2 cup sourdough starter
  • 1/2 cup cocao powder
  • 1 tbsp vanilla
  • 1 cup melted butter
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon

Instructions

  1. Using a cheese grater or a food processor, shred the zuchinni.
  2. Transfer the zuchinni into a strainer lined with cheese cloth and squeeze out all of the remaining liquid.
  3. Preheat the oven to 350°F.
  4. When all of the liquid has been strained from the zuchinni, transfer it into a bowl with the eggs, sourdough starter, butter, brown sugar and vanilla.
  5. In a second bowl, combine the remaining ingredients.
  6. Combine the wet and dry ingredients together using a hand mixer.
  7. Lightly grease a loaf pan with oil or butter.
  8. Pour the batter into a loaf pan and place into the oven.
  9. Bake for 1 hour and 10 minutes or until the toothpick test yeilds a clean result.
  10. Allow the loaf to cool before removing from the pan and serving.
