Sourdough Banana Walnut Muffins

There is nothing quite like a warm muffins straight from the oven. These Sourdough Banana Walnut Muffins make the perfect treat.

One of our favorite homeschool activities is baking. We bake frequently and constantly. Baking offers up so many learning opportunities and not to mention, it ends with a delicious treat.

Most of my recipes all follow one simple muffin recipe. From that one recipe, we can make hundreds of different muffin combinations! 

Our current favorite are these amazing and moist Sourdough Banana Muffins with Walnuts.

What You Need to Make Sourdough Banana Walnut Muffins

  • Sourdough Starter
  • All-Purpose Flour
  • Baking Powder
  • Baking Soda
  • Honey
  • Eggs
  • Plain Greek Yogurt
  • Butter
  • Vanilla
  • Salt

Prepare Your Bananas For Baking

This recipe uses 3 bananas. It is best if the bananas are overripe and from the freezer. The best bananas for baking are the ones that are black!

Remove your bananas from the freezer and bring them to room temperature on your counter until you are ready to start baking. 

If you are lacking in overripe bananas, set your oven to 300°F and bake them on a lined baking tray until the peels turn black. Let them cool before handling and continue with the recipe. 

How to Make Banana and Walnut Muffins

Start by preheating your oven to 400°F and grease your muffin pan. 

Using a stand mixer or a bowl and fork, mix together your flour, baking powder, baking soda and salt. 

In a separate bowl, add your eggs, honey, yogurt, banana and yogurt. Use an electric mixter and combine the ingredients well. 

Now add your wet ingredients into the stand mixer and mix on low until all of the ingredients are well combined.

Scoop roughly 1/3 cup of the muffin batter into each well of the muffin pan. We like to sprinkle the tops of some of the muffins with mini-chocolate chips for an extra treat!

Banana muffins batter has been scooped into a 12 cup muffin pan. Some of the muffins have been sprinkled with chocolate chips.

Place into your oven and bake for 20-25 minutes. 

When the muffins have finished, check the doneness using the toothpick method. If the toothpick comes out clean, your muffins are fully cooked. 

You can serve these muffins right out of the oven, slathered in butter (my personal favorite) or you can store them at room temperature for a later date.

Can I Freeze Muffins?

Yes! Muffins are perfect for freezing!

When you are ready to serve them, allow them to thaw fully at room temperature first! Once they have reached room temperature, you can serve them as is or heat them in the oven or microwave.

Tips to Super Moist Muffins

Want to know the secret to a super moist muffin? It’s all in the preparation and how you bake. 

To make moist muffins, it is important to mix your wet and dry ingredients separately. 

It is also best if you bring all of your ingredients up to room temperature first, like the eggs and yogurt. 

Never over bake your muffins. I like to keep an eye on my muffins and check their doneness as soon as they appear to be close to the finish line. That way they never over bake and leave me with dry muffins.

You could also try swapping out the butter for a neutral oil like sunflower or coconut oil. Butter will lead to a richer flavour in your muffins but oil will make the muffins moist.

Ingredients

  • 2 cups flour
  • 1/2 tsp baking soda
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup sourdough starter
  • 3 mashed bananas
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup yogurt
  • 6 tbsp room temperature butter
  • 1 tbsp vanilla extrat

Instructions

  1. Begin by preheating your oven to 400°F and grease a 12 cup muffin pan.
  2. In a bowl, using a handheld mixer, whisk together the sourdough starter, bananas, sugar, eggs, yogurt, butter and vanilla.
  3. In a second bowl, combine the flour, baking soda, salt and baking powder.
  4. Add your dry ingredients into the bowl with your wet ingredients and combine using a stand mixer or handheld mixer.
  5. Add in your walnuts and quickly mix them into the batter.
  6. When all of the ingredients are fully combined, begin to scoop 1/3 cup of batter into each cup of your muffin pan.
  7. Place your muffin pan inside the oven and bake for 20 to 25 minutes.
  8. Allow your muffins to cool slightly before serving.
