Sunday Morning Sourdough Popovers

A Sunday morning brunch is not complete without a full basket of warm, fluffy sourdough popovers.

Popovers are a Sunday morning staple over here. They are such a simple thing to whisk together and pop into the oven. Pair them with some homemade butter and delicious strawberry jam and you have the most amazing breakfast on your table.

The Secret to the Best Sourdough Popovers

The secret to the fluffiest popovers is all in the batter and sourdough starter.

Popovers preform best when the milk is warmed and the batter is prepared at room temperature. This includes using room temperature eggs.

While this sourdough recipe uses sourdough discard, I recommend using a full, active and bubbly sourdough starter to really give your popovers a little more bang for your buck!

What you need to make sourdough popovers

Sourdough Starter

Whole Milk

Flour

Eggs, at room tempterature

Butter

Salt

Flour

Oil, for greasing

How to make sourdough popovers

Begin preheating the oven to 400°F. Place the popover pan into the oven to preheat as well.

In a microwave safe dish or in a saucepan, heat the milk and warm the butter together until the butter has melted and the milk is roughly at room temperature.

Whisk the eggs, flour and salt together in a large bowl. Then, add in the milk and butter. Whisk until all the ingredients have been well combined. The batter will have a heavy cream consistency. 

Remove the popover pan from the oven and brush with oil or butter to prevent the popovers from sticking. Then, pour the batter inside until each well is just shy of being full. 

Bake for 40 minutes.

Popovers are best served hot and right out of the oven. As they cool, they will deflate slightly. 

Serve with butter and assorted jams and other spreads. I love mine with salted caramel apple butter. Yum!

  • Popover Pan (optional, muffin pans work as well)

Ingredients

  • cup whole milk heated up
  • 2 tbsp butter melted
  • 1 cup flour
  • ½ cup sourdough starter
  • ½ tsp kosher salt
  • 3 eggs room temp.
  • butter or cooking spray for greasing baking pan

Instructions

  • Preheat oven to 400°F. Place popover pan or muffin tray inside the oven.
  • On a stovetop or in a microwave, begin by heating up your milk and melting your butter. Set aside until slightly cooled.
  • In a large bowl, whisk together the starter, eggs, flour and salt.
  • Whisk in your milk and butter until there are no longer any visible clumps.
  • Remove popover pan from oven and begin to fill each well until it is slightly underfilled.
  • Move tray into the oven and bake for 40 minutes.
  • Serve hot with your favourite butters and jams.
