Quick Chocolate Peanut Butter Granola

I am a HUGE chocolate and peanut butter fan. Out of all the sweet treat combinations that you can think up, chocolate and peanut butter will always be my number one. It’s classic. It’s timeless. You can’t possibily name a more dynamic duo!

I’ve been buying a lot of processed, pre-made granola recently. I miss making my own granola but when you’re in a busy time of life, you just have to eat and feed your family. Right?

Things finally seem to be slowing down. The days are getting shorter and there is much less to do outside. I finally have time to make some homemade granola and after seeing all the options at the store, I am inspired about all the combinations I can’t wait to try making!

Is granola breakfast or is it dessert?

The answer is yes! Granola is a breakfast, it’s a snack, it’s a dessert! Granola goes well with so many things. While I personally stick to the classic of enjoying my granola on yogurt, it can also be:

  • Eaten as cereal.
  • Scooped into smoothies for extra flavour and protein.
  • Poured into a bowl and eaten when you have the munchies.
  • Even served with ice cream!

Which oats make the best oatmeal?

Typically rolled oats or old-fashioned oats are used in granola, but you can use quick oats in a pinch!

What You Need to Make Chocolate Peanut Butter Granola

  • Old Fashioned Oats
  • Peanut Butter
  • Honey
  • Coconut Oil
  • Chocolate Chips or Chunks

How to Make Chocolate Peanut Butter Granola

Preheat your oven to 325°F.

In a large bowl, or stand mixer, mix together the oats, peanut butter, honey and oil.

Line a rimmed baking sheet with parchment paper or a silicon baking sheet. Pour the oat and peanut butter mixture onto the baking sheet and spread it evenly using a rubber spatula.

Place into the oven and bake for 20 to 25 minutes, flipping the granola halfway through.

Remove the granola from the oven and set aside until it is fully cool.

When the granola has cooled down, add in the chocolate chips and mix until they are incorporated and the granola has broken up into deliciously chunky pieces.

Store your homemade granola in an airtight container at room temperature. Your granola will last up to 2 weeks.

Variations on Chocolate Peanut Butter Granola

There are so many ways that you can spice up this chocolate peanut butter granola!

For a Sweet and Salty take on this recipe, you could add pretzel pieces and a few peanuts.

If Dried Fruit is your thing, banana or strawberry pairs beautifully with chocolate and peanut butter.

For extra protein, add in an egg before baking.

You could even add in a few mini-M&M’s or Smarties to make this an extra special dessert!

Chocolate Peanut Butter Granola

Ingredients

  • 4 cups old-fashioned oats
  • 1 cup peanut butter
  • 1 cup chocolate chips
  • 1/2 cup honey
  • 1/4 cup coconut oil

Instructions

Preheat oven 325°F and line a rimmed baking sheet with a parchment paper or silicon baking sheet.

In a stand mixer, or large bowl, add in the oats, peanut butter, coconut oil and honey and mix until all the ingredients are fully combined.

Transfer the granola to the baking sheet and spread evenly.

Place the baking sheet in the oven and bake for 25 minutes.

Halfway through baking, remove the granola from the oven and flip it before returning it to the oven.

Allow the granola to cool off completely before adding in the chocolate chips, stir and then transfer to a container for storage.

Notes

  • Homemade granola will last in a container at room temperature for up to 2 weeks.
  • For added protein, add an egg to the mixer before baking. This will also help the granola to create large clusters.
  • Try adding dried fruit, small candy pieces or pretzels to create many different flavour combinations.
