Simple Sourdough Pie Crust

Use your sourdough discard to create this buttery, flaky, delicious sourdough pie crust.

A good pie crust is the basis of so many of our recipes here on the homestead.

It’s a versatile food that can be made in so many ways and lend itself to so many different recipes. You can use your sourdough pie crust for pies, tarts, galettes and many more tasty treats!

Since a good pie crust is the foundation, it’s important to take your time and really get it right. A pie crust can either make or break a dish and we want ours to be as buttery and flaky as possible.

What you need to make a sourdough pie crust

Sourdough Discard

Cold Butter

Flour

Honey

Salt

Vinegar

What is sourdough discard?

Sourdough discard refers to the sourdough removed from the starter prior to a feeding. Sourdough discard is unfed and is a great base for many recipes that do not require active yeast.

Discarding is an important step in creating and maintaining the health of your sourdough starter.

How to make a buttery sourdough pie crust

Begin by chopping the cold butter and adding it to a mixing bowl. Then, add in the flour.

Use a fork or dough blender to press the butter into the flour, creating a coarse crumble. Next, add in the starter, honey, salt and vinegar.

Bring all the ingredients together using a fork.

Use your hands to bring the remaining dough together into a tight ball.

Place the dough on a lightly floured surface and use a rolling pin to bring the dough to the desired thickness.

Use your pie crust for pies, tarts, quiches and whatever else you desire.

How to store your pie crust

Store your pie crust by rolling it out on a piece of parchment paper. Roll the parchment paper up and then store in the fridge for up to a week.

For longer lasting pie crust, store it in the freezer in a zippered bag. It will keep for up to 6 months.

  • 1 1/2 cup flour
  • 1/2 cup sourdough starter
  • 1/2 cup cold, chopped butter
  • 1/2 tsp salt
  • 1 tsp honey
  • 1 tsp vinegar or ice water
