Mornings are hectic in this house. As a busy homesteading mom, mornings are jam packed with breakfasts, laundry, chickens and trying to get kids ready for the day. A lot happens before 7am!
I set myself up for success in the morning by planning ahead so I don’t have to think about what to make for breakfast.
I prefer to ease into my day with a strong cup of coffee but within minutes of hearing children’s feet hit the floor, it is a whirlwind of “What’s for breakfast?” and “Can I have a snack?”
So, to set us up for a peaceful start, I always have many breakfast options ready to go for the flurry of grumbling stomachs that faces me every morning.

The best part is that mini quiches are made out of all the same goodness as regular quiches!
For my mini quiches, I use my homemade sourdough pie crust. It is delicious and the base for so many of my favourite recipes.
Fill the quiches with some incredible farm fresh eggs. Then, sprinkle in some cheese and you have an amazing meal.
You can get as creative with your quiches as you’d like.

This recipe is a basic cheese quiche recipe. But you can add anything you’d like to your quiche to make this your favourite make ahead breakfast!

Pie Crust – You can use my recipe for sourdough pie crust or use your favourite homemade recipe!

How to Make Mini Quiches
Start by preheating your oven to 375°F and roll out your pie crust to 1/8″ thick.
Use a large cookie cutter to cut out discs that are roughly 6″ in diameter.
Next, grease your muffin tray using butter or your preferred oil. You can line the wells of the muffin tray with parchment paper or even with cupcake liners. I choose put my pie crust directly into the wells.
Use a whisk to beat together the eggs, add in the cream and cheese.
Spoon 1/4 cup of the egg and cheese mixture into the mini pie crusts.
Place the muffin tray into the oven and bake for 20 to 25 minutes.
Finally, remove the mini quiches from the oven and serve them hot.
How to Store Your Mini Quiches for a Quick Breakfast
To keep your mini quiches fresh and ready to reheat for breakfast, store them in the fridge for up to one week.
You can also try packing them into a large freezer bag and freezing them for up to 6 months.
To reheat, simply pull them out of the freezer and pop them into the oven to bake for 12 to 15 minutes at 350°F.

Ingredients
- 1 pie crust
- 6 eggs
- 1/4 heavy cream
- 1 cup shredded cheese
- salt and pepper, to taste
Instructions
Preheat oven to 375°F.
Roll out the pie crust to 1/8" thick and then use a cookie cutter or bowl to cut out mini crusts that are 6" wide in diameter.
Grease or line a muffin pan with liners and place the crusts into the wells of the pan.
In a bowl, whisk together the eggs and cream. Add in salt and pepper.
Shred the cheddar cheese and fill the pie crust halfway with cheese.
Pour the egg mixture into the pie crusts. Each quiche will hold approx. 1/4 cup.
Place the muffin pan in the oven and bake the mini quiches for 20 to 25 minutes.
Notes
To personalize your mini quiche, try adding your favourite meat or veggies into the quiches. Mushrooms, ham, onions, spinach, peppers and bacon all make tasty additions to this recipe.
To store, your mini quiche, place them into a freezer bag or container and refridgerate for up to one week. The mini quiches will last in the freezer for up to 6 months.
To reheat, place into the oven at 350°F for 12 to 15 minutes until the quiche are warm throughout.
