Making butter has become a new hobby of mine. Once a week, you can hear the whir of my stand mixer, mixing away in the kitchen, preparing butter for the week. My weekly butter making session leaves me with a lot of leftover buttermilk.

I’ve come up with a lot of creative ways to use the buttermilk. Muffins, cakes, plenty of bread… but one thing that I whipped up was quickly a favourite. That is this amazing and tasty buttermilk coffee loaf.

But why not take the decadent craving one step further and add in some sweet chocolate chips?

What is a coffee loaf made out of?

Coffee loaf, or cake, is a sweet loaf that is mostly recognize for it’s tasty cinnamon flavour. Despite the name, coffee loaves have no actual coffee in them! The names come from the fact that it pairs beautifully alongside a hot cup of coffee.

Coffee cakes or coffee loaves can be served with a delicious, crumbly streusel topping on top or with a simple vanilla glaze.

What you need to make a buttermilk coffee loaf with chocolate chips

All purpose flour

Buttermilk

Butter, at room temperature

Sugar

Eggs, at room temperature

Salt

Baking soda

Chocolate chips

Sugar

Cinnamon

How to make a delicious chocolate chip coffee loaf

Begin by preheating your oven to 350°F and lightly greasing a loaf pan with butter or oil.

In the bowl of a stand mixer or in a bowl using a hand mixer, cream together one cup of the sugar and the butter. Then add in the egg and buttermilk and mix together on a low speed.

Next, add in the flour, salt and baking soda and whisk together.

Gently add the chocolate chips into the batter.

In a separate bowl, mix together the remaining sugar and cinnamon to make your cinnamon swirl filling and topping.

Pour roughly half the batter into the greased loaf pan. Sprinkle half of the cinnamon sugar into the batter and use a butter knife to swirl the topping around.

Add in the remaining batter and sprinkle the rest of the cinnamon sugar on the top of the batter.

Place the loaf pan into the oven and bake the coffee loaf for 60 to 70 minutes.

Use the toothpick test to ensure the loaf is baked thoroughly before removing from your oven.

Allow to cool before removing from the loaf pan, slicing and serving.

Tips and Tricks

The toothpick test is done to check the doneness of quick breads, muffins, cakes and anything with a wet batter. Simply insert a small, thin stick, like a toothpick, larger skewer or even a butter knife into the centre of the bread. If the stick is removed with no batter covering it, the baked good is done. If the stick is removed with some wet batter remaining, add a few minutes to the timer and check again.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 1 egg, room temperature
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup chocolate chips

For the swirl and topping

  • 2/3 cups white sugar
  • 1 tbsp cinnamon powder

Instructions

  1. Begin by preheating the oven to 350°F. Lightly grease a loaf pan with butter or oil.
  2. In the bowl of a stand mixer, cream together one cup of sugar and butter. Add in the egg and buttermilk, mixing on a low speed.
  3. Add in the flour, salt and baking soda.
  4. Next, add in the chocolate chips and gently mix them into the batter.
  5. In a small bowl, whisk together the additional sugar and cinnamon to make the cinnamon swirl and topping.
  6. Pour roughly half the batter into the greased loaf pan.

  8. Add in the remaining batter and sprinkle the rest of the cinnamon sugar on the top of the batter.
  9. Place the loaf pan into the oven and bake for 60 to 70 minutes.
  10. Allow the loaf to fully cool before removing from the loaf pan and serving.
