Bone broth is one of the healthiest things that you can consume and while you can easily go buy it off a grocery store shelf, why do that when you can make the most healthy and nourishing broth right in your own kitchen?

What is beef broth?

Beef broth is the beautiful cooking liquid that comes from stewing your leftover beef bones in water. This will create the most flavourful, rich broth that is perfect for cooking with or sipping to absorb all of it’s healthy qualities.

Beef broth can be made by using only the bones of the cow, or, you can add in your favourite veggies to create and develop on entirely new flavour. Adding vegetables into your broth will enhance it with many more essential vitamins and minerals. It will also add depth to the taste of your broth.

Bone broth is loaded with healthy vitamins and nutrients that contribute to your personal wellness.

How to make beef broth from your kitchen scraps

In a society like today’s where every penny counts, why waste your kitchen scraps when you can transform them into something so flavourful and nourishing for your body?

When peeling carrots and celery for dinner, don’t throw away the peels and leafy ends. Add them into a reusable storage bag and keep them in your freezer. Vegetables like carrots, celery, onions, garlic, mushrooms and fresh herbs are best for using in homemade broth.

The same can be done with leftover beef bones. The larger, meatier bones make the best broth but you can use them all for your homemade broth.

Tip: Dehydrating your veggies to make stocks is a great way to make the most out of your summer harvest!

What you need to make beef broth

4 lbs of beef bones

Assorted veggies like onions, celery and carrots

Fresh herbs like sage, rosemary and thyme

Apple Cider Vinegar

Salt and Pepper to taste

Water

How to make homemade beef broth

First, fill a large stock pot with your bones, vegetables and herbs. Cover the bones and vegetables with cold, filtered water.

Then, add in the salt, pepper and apple cider vinegar.

Place the stock pot on the stove top and bring to a boil. Once boiling, cover with a lid and reduce the heat to a simmer. Allow the broth to simmer on the stove for 24 hours.

Strain the bones and vegetables out of the broth and then add salt and pepper to taste.

You can use your broth immediately or store it by canning or freezing to use at a later date.

The key to the best bone broth

The best bone broths are made from the best ingredients. Make sure that the bones and vegetables that you are adding into the pot are of the highest quality.

Sourcing your beef from local farmer’s will guarantee that you are getting the best raised and best quality beef. The difference will be in the flavour.

Your veggies should be clean from debris and fresh or frozen at peak freshness.

Notes and Variations

You can also use this same method to make chicken stock.

Adding an acidic component like vinegar or lemon juice will help to break down the bones and draw out the most nutritious minerals.

Ingredients

  • 4-5 lbs beef bones
  • 1 white onion
  • 2-3 chopped carrots
  • 2 stalks of celery
  • 5 quarts of water and then additional water as needed
  • 2 tbsp fresh rosemary
  • 2 tbsp fresh thyme
  • 2 tbsp fresh sage
  • 1 tbsp salt
  • 1/2 tbsp pepper
  • 2 tbsp apple cider vinegar

Instructions

  1. Add the bones, vegetables and herbs to a large stock pot.
  2. Cover the bones and vegetables with water.
  3. Place the pot over high heat.
  4. Add in the vinegar, salt and pepper.
  5. Bring the pot to a boil, then reduce the heat and cover. Allow to simmer on the stove top for 24 hours.
  6. Add additional water as the cooking liquid reduces and evaporates.
  7. Strain the vegetables and bones from the broth.
  8. Store broth according to your preference.

Notes

Store your homemade beef broth by freezing, refrigerating or pressure canning.
