All Day Chicken Stock

Next to the smell of a chicken roasting in the oven, the next best thing is spending the whole day wrapped up in the aroma of a long-simmered chicken stock. 

Technically, yes. You can do this in much quicker ways. Most chicken stocks can be ready within an hour but a long-simmered stock has a richness to the flavour that shorter simmered stocks will just not compare to. 


Whenever we make chicken, I always save the bones. If we have just roasted a chicken, I’ll put whatever is left of the carcass straight into the stock pot. If we don’t have quite enough bones, depending on the cut of chicken, I will place them into a freezer bag and wait until we do have enough to make a stock. 

Making chicken stock with leftover bones is extremely easy! Pretty much all you need to do is dump all the ingredients into a large stock pot, add in water and whatever spices and herbs you please, cover and leave it alone to simmer all day! 

Yes, that is essentially the entire recipe. 

When the stock has finished, simply strain out the vegetables and bones and store the broth to your preference. We use a lot of stock in this house for different recipes and meals. I keep a large canister of it in the fridge at all times!  Most weeks, it is completely finished by the time I roast my next chicken. 

If you have dipped any of your toes into wellness culture lately, you’ll have heard all about the wonderful benefits of drinking bone broth. Broth is great and all but stock actually has, on average, more vitamins and minerals and it tastes much better due to the other flavours being added.

Besides saving all the bones and storing them in the freezer, another thing I like to do in an effort to reduce waste is save our vegetable scraps. Whenever I am preparing vegetables for dinner, if there are any scraps left over, like pieces of onions or carrots, much like the chicken bones, they go into a freezer bag. Instead of wasting a bunch of whole fresh vegetables, I use these!

But don’t worry, the recipe below uses all fresh vegetables.

All Day Chicken Stock

Ingredients

  • 3-5 lbs chicken bones
  • 1 white onion cut into large pieces
  • 2 stalks of celery cut into large pieces
  • 3 carrots cut into large pieces
  • 6-8 cups water
  • 5 sage leaves
  • a few sprigs of thyme
  • salt and pepper to taste

Instructions

  • In a large stock pot, add all of your ingredients, excluding your salt and pepper.
  • Fill your stock pot with water until the water is rougly 1-2" above all the other ingredients and they are fully submerged.
  • Bring your stock to a simmer and low-medium heat. Cover and leave to simmer for 10-18 hours.
  • Near the end of your simmering time, uncover your stock and add in your salt pepper to taste.
  • Strain your vegetables and bones from your stock and store according to your preference.
