Making your own homemade pasta is a fun and rewarding activity to do that can be completed in an afternoon to make the most amazing from scratch dinner!

Our little ladies are now laying eggs. Which means that we are bringing in a few dozen eggs some days. It is a lot and we already have more eggs preserved than we could possibly eat by next year.

While there are many methods to preserving eggs, my favourite way is actually making pasta.

With 3 hungry kids, pasta is a weekly staple. It’s the perfect last minute meal for when we forget to take meat out of the freezer or on busy weekdays when there seems to be a million activies every evening and no time to make dinner!

Homemade pasta goes well with so many things and is a very versatile food. From spaghetti and meatballs to butternut squash sauce or a light lemon balm pesto, pasta can be made in so many different ways for so many occassions.

Is homemade pasta worth the effort?

Look, I get it. Making pasta can seem like a long and tedious process. With all the kneading and the time it takes to roll out the dough and then the cutting and drying the pasta… It can seem so much easier to just grab a box of dried pasta off the shelf of the grocery store and call it a day.

I firmly stand by the idea that anything worth having is worth the extra effort.

Homemade pasta is far superior in so many ways and this recipe is packed full of protein. Plus, it only has 4 basic ingredients!

What You Need to Make Homemade Pasta

  • Egg Yolks
  • Flour
  • Olive Oil
  • Salt

To Use a Pasta Machine or Not

I love my pasta machine. It isn’t special but it does save me a ton of time when I’m making pasta, which, as a busy mom, I love. I also use a stand mixer to knead my pasta dough instead of by hand.

If you don’t have a pasta machine, don’t worry. They aren’t totally necessary. You can also use a rolling pin to roll out the dough and a regular kitchen knife to cut the pasta.

How to Make Your Own Pasta

Start off by separating the egg whites from the egg yolks. For this recipe, we will use only the yolks. Set the egg whites aside and you can use them to make a delicious quiche later!

Add your egg yolks into the bowl of a stand mixer and add the rest of your ingredients. 

Using a dough hook, begin mixing the ingredients and allow the mixer to do all the kneading for you. This could take up to 10 minutes. If needed, add more flour if the dough is too sticky or small amounts of water if the dough is too dry. 

When the dough is smooth, remove it from the mixer and shape it into a ball. Place the ball into a bowl, cover it and set it aside for 30 minutes. 

If you are using a pasta machine, begin to work the dough through the machine, starting at the highest setting and working down to your preferred thickness. I like to work mine down to a 1 or 2.

When you have worked the dough down to your desired thickness, you can use the cutting attachment to cut the pasta to the shape you like best. 

I am cutting mine into fettuccine ribbons and then hanging them on this pasta drying rack to dry overnight before storing.

How to Store Homemade Pasta

You can store your homemade pasta in the refridgerator for 2 to 3 days but it stores best in the freezer! Your homemade pasta will last in the freezer at best quality for up to a month but will keep for longer.

How to Cook Your Pasta

Cooking homemade pasta is similar to cooking boxed pasta from the store.

Bring a pot of salted water to a rolling boil, add in your pasta and cook for 5 to 10 minutes until the pasta is al dente, which means that you want the pasta to be firm and not too soft.

Ingredients

  • 20 eggs, just the yolks
  • 4 cups flour
  • 2 tbsp olive oil
  • 2 tsp salt

Instructions

Start by separating the egg yolks from the egg whites. Set the egg whites aside and add the egg yolks into the bowl of a stand mixer. 

Add the remaining ingredients into the bowl with the egg yolks and begin mixing the dough on a low speed with a dough hook. 

Continue to mix the dough until it all comes together. Add more flour or water if necessary to obtain the right consistency. 

When the dough has come together, remove from the mixer and shape into a smooth ball.

Place the ball into a bowl, cover with a towel and set aside for 30 minutes.

When the dough has finished resting it is time to begin working it through the pasta machine. It may be easier to do in smaller pieces. 

Work the dough down until it has reached the desired thickness. For fettuccine, like in the photos, it is best at a 1 or 2 on the dial. 

Cut the pasta into shape using a knife or the attachment on the pasta machine.

Cook the pasta fresh or place onto a drying rack to dry before storing. See notes for more information.
