Pulled Pork and Cheddar Sourdough Quiche

I am getting exhausted by plain old sandwiches for lunch and I think my family is too.

With the seasons changing and the weather cooling down, I’m starting to work on my repetoire of heartier lunches that will keep up warm and our bellies full throughout the day.

For Father’s Day this year, my husband recieved a PitBoss Pellet Smoker and he has been working away at perfecting different kinds of smoked meat (sorry to those who abstain from meat consumption). Last week he made us this absolutely delicious pulled pork. It made a fantastic dinner but we did end up with quite a bit leftover.

Keeping our food waste down has been a priority of mine for a while so instead of just re-heating it or losing track of it in the back of my fridge, I turned it into one of the best quiches that I have ever had!

I love making quiches. They are so easy to quickly put together and you can add almost any ingredient and it will taste amazing. They store very well. I love to make quite a few at a time and then freeze them for later.

The base of any good quiche is it’s crust. Luckily for you, I have the perfect sourdough pie crust recipe that you can find right here! For the filling, you will need 4 eggs, 1 cup of pulled pork, ¼ cup of whole milk, 1 cup of shredded cheddar cheese, a few tablespoons of chives and a pinch of salt and pepper. 

Start by preparing your pie crust and getting it laid out into a greased pie dish. You will also want to start getting your oven pre-heated to 375°F.

In a large bowl, you can start combining your other ingredients and pour them into your pie crust when you are ready to bake. Bake your quiche for 40 to 45 minutes and serve!

This quiche make the best lunch or dinner and tastes amazing smothered in barbecue sauce.

Ingredients

  • 1 pie crust
  • 1 cup pulled pork
  • 4 eggs
  • 1 tbsp chives
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste

Instructions

  • Preheat your oven to 375°F.
  • In a well greased pie dish, lay out your pie crust.
  • In a large mixing bowl, whisk your eggs and milk together.
  • Place your pulled pork and shredded cheese into the pie crust and evenly distribute the filling.
  • Pour your egg mixture over the filling in the pie crust.
  • Sprinkle your chopped chives, salt and pepper on top.
  • Place pie dish into heated oven and bake at 375°F for 40 to 45 minutes.
  • Enjoy!
