There is nothing quite like a simple, quiet morning, where after just a little bit of effort, a delicious and hot breakfast appears on the table before your family.

With just a little bit of forethought the night before, this could be your morning.

I have been working on many make-ahead meals lately but the breakfast ones are always my favorite. This breakfast french toast casserole is a delicious way to start off the morning. The process is similar to that of my Strawberry Rhubarb French Toast Casserole but this time we are using some of the best brioche bread that I have ever tasted!

For this recipe I used my homemade sourdough brioche recipe but to save you some time, you can buy a loaf of brioche from the store, it just won’t have that rich sourdough flavor.

What you need to make blueberry brioche french toast casserole

Blueberries

Sourdough brioche bread

Eggs

Heavy cream

Honey

Cinnamon

Salt

Vanilla extract

How to make a french toast casserole

Begin by cutting or tearing the sourdough brioche into small, bite sized pieces and placing them into a bowl or casserole dish.

In second bowl, crack in the eggs. Add in the cream, honey, cinnamon, salt and vanilla.

Whisk them together until they are fully combined.

Pour the liquid ingredients over the brioche pieces and cover with a well-fitting lid or aluminum foil.

Allow the bread to absorb the liquid for up to an hour.

To save time in the morning, I like to get all the previous steps done before bed and let the french toast casserole sit in the fridge overnight before baking.

When you are ready to bake the casserole, preheat the oven to 350°F. Place a medium sized cast iron skillet into the oven while it preheats.

When the oven is finished preheating, remove the cast iron skillet from the oven and add the uncooked french toast pieces into the skillet.

Add in your blueberries.

Place the skillet into the oven and bake the casserole for 30 to 35 minutes.

When the casserole is finished baking, sprinkle the top with icing sugar and serve warm with maple syrup and fresh fruit.

Ingredients

  • 1 loaf sourdough brioche
  • 1 cup blueberries, fresh or frozen
  • 6 eggs
  • 1/2 cup cream
  • 1 tbsp honey
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1/2 tbsp vanilla extract
  • icing sugar, for serving

Instructions

    Begin by cutting or tearing the sourdough brioche into small, bite sized pieces and placing them into a bowl or casserole dish.

    In second bowl, crack in the eggs.

    Add in the cream, honey, cinnamon, salt and vanilla. Whisk them together until fully combined.

    Pour the liquid ingredients over the brioche pieces and cover with a well-fitting lid or aluminum foil.

    Allow the liquid to absorb into the bread for up to one hour or overnight.

    Preheat the oven to 350°F.

    Grease a 9 x 13 casserole dish and then pour the uncooked casserole into the dish.

    Add in the blueberries.

    Place the casserole dish into the oven uncovered and bake for 30 to 35 minutes.

    Sprinkle with icing sugar and serve warm with maple syrup.

Notes

Change up the fruit to your favourites to give this casserole a whole new flavour.

Add in chocolate chips for a more decadent breakfast option.
