Cornbread Stuffing

I’m sure many are not quite ready for Thanksgiving, we are getting prepared! You see, we are a dual citizenship household. While Americans still have another month to prepare for Thanksgiving, it is creeping up quickly on us Canadians!

I have an amazing stuffing recipe that was passed down to me by my father in law and while his recipe is definitely our family favourite, this recipe came about on a night when we just had to make due with what we had.

I was making my herb roasted chicken the other day when the desire for stuffing came over me. But we had no bread! Luckily we did have a large amount of leftover cornbread from the night before. That is how cornbread stuffing came to be.

What You Need to Make Cornbread Stuffing

  • Cornbread (I have a recipe for sourdough cornbread here)
  • Granny Smith Apples
  • White Onions
  • Celery
  • Butter
  • Fresh Rosemary
  • Salt
  • Pepper

How to Make Cornbread Stuffing

To start, you will need cornbread. I happen to have a really yummy sourdough discard cornbread recipe right here but any cornbread will do though! Once your cornbread is baked and ready, allow it to cool fully before moving on with the recipe.

Start preheating your oven to 350°F.

Chop the cornbread up into pieces, you can make them as large or small as you’d like. I aim for about ½” cubes. Add them into a large mixing bowl.

Next, dice the celery and onion and add them into the mixing bowl.

In a microwave safe container or small saucepan, melt the butter. When the butter has melted, add it to the mixing bowl and combine well. Add salt and pepper to taste.

Transfer the stuffing to a roasting pan or cast iron skillet.

Bake for 30 minutes, turning the stuffing halfway through the baking process.

Before serving, finely dice a Granny Smith apple and combine it with the stuffing.

Serve immediately while the stuffing is still warm alongside your favourite Thanksgiving staples.

Ingredients

  • 4 cups of diced cornbread
  • 1 white onion, diced
  • 3-4 stalks of celery, finely sliced
  • 1 granny smith apple, finely diced
  • 1 cup melted butter
  • Salt
  • Pepper

Instructions

Preheat oven to 350°F.

Prepare the ingredients by cutting the cornbread into ½" to 1" cubes and dicing the onion and celery.

Melt the butter in a small saucepan or microwave safe container.

Add them all into a mixing bowl and combine well. Add salt and pepper to taste.

Transfer the stuffing to a cast iron skillet or baking dish and place into the oven.

Bake the stuffing for 30 minutes, gently turning halfway through the baking process, until the stuffing is golden brown.

While the stuffing is baking, finely chop a granny smith apple and add it to the stuffing when the stuffing is removed from the oven.

Serve the stuffing warm as a side with all your favourite Thanksgiving staples.
