Herb Butter Corn on the Cob

A good, old-fashioned barbecue is not complete without corn on the cob smothered in butter! I’m talking about delicious, corn on the cob with butter, salt and a few fresh herbs roasted to perfection.

I love corn on the cob. It is probably my favourite summer treat and I look forward to it every barbecue season! It is such a simple food to cook and so full of flavour.

The Best Way to Roast Corn on the Cob

Wrapping corn in foil and roasting it on the grill is really the best way to get the best corn you can imagine. This method is so easy and it takes little time to prep. You can roast the corn directly in the husks or remove the husks first.

What You Need to Roast Corn on the Cob

To complete this recipe, you will need:

  • Aluminum foil
  • Corn in the husk
  • Butter
  • Salt
  • Pepper
  • Rosemary
  • Thyme

How to Roast Corn on the Cob

Start of by removing the husks from the corn and then lay out a few sheets of aluminum foil.

Place your corn onto the foil with a few leaves of thyme, rosemary, some salt, pepper and a tablespoon of butter. Fold the foil gently over the corn, closing the ends and then poke a few holes into the foil with a tooth pick.

Next bring your grill up to temperature. You want it to be on a medium to high heat, 375°F to 450°F. We love to cook ours on our PitBoss Pellet Smoker. This machine is amazing!

When the grill has reached an ideal temperature, place the foil onto the grill and roast it for 20-25 minutes. Turn the foil packets over half-way through the grilling process.

Remove your corn from the grill.

Serve the corn in the packets as a tasty side to any BBQ meal!

Roasting Corn for a Crowd

Grilling space real estate is so important when having a backyard cookout! If your grill or barbecue can’t possibly hold any more food, you can easily recreate this recipe in your oven.

Heat your oven to 450°F. Follow the same steps as your would for your grill. Place the foil packets of corn onto a baking sheet or in a roasting pan and then put them in the oven.

Bake for 20-25 minutes and then complete the recipe!

Yield: 6 servings

  • 6 Ears of corn, sstill in the husks
  • 6 tbsp butter
  • 6 tsp salt
  • 3 tsp pepper
  • 6 tsp chopped rosemary
  • 6 sprigs of thyme

Instructions

Place the foil wrapped corn onto the grill, or on a baking sheet and into the oven, and bake for 20 to 25 minutes.

Remove the corn from the grill.

Serve in the foil packets with salt and butter as a delicious side to any BBQ!
