Doesn’t Autumn just crave comfort foods?
Since moving out onto our homestead, there has been a great shift in the way that we eat and the way that we prepare food. The way we think of food and the way we consume food. We do still visit the grocery stores but in the attempt to grow the majority of our own foods our relationship to food and the seasons have changed.
Spring is the time for those first few fresh, leafy greens.
Summer is the time for abundance.
Autumn is the time for preserving and using up what we have left.
Which is precisely how I started making this recipe. One day, when I was feeling ill and not up to making the rounds to the grocery store or out to the garden, I took stock of my refrigerator, which was mostly empty, save for a few scraps of leftovers. I managed to take those leftovers and turn it into the most delicious Sausage and Potato Soup.
What do you put in Sausage and Potato Soup?
One of the best things about most soups and stews is that it is really hard to go wrong with ingredients. Of course, you need all the essentials; sausage, potatoes and broth.
My potato soup is loaded with comfort foods but can be added upon to change the recipe to suit the chef and their tastes.
What You Need to Make Sausage and Potato Soup
- Mild Italian Sausage
- Potatoes
- Onions
- Carrots
- Beef Broth
- Flour
- Salt
- Pepper
- Heavy Cream
- Butter or Oil
How to Make Sausage and Potato Soup
In a cast iron dutch oven, heat the butter over medium to high heat. Add in the sausage and onions and cook until the sausage is no longer pink and the onions are soft.
Dice the potatoes and carrots, add them into the dutch oven. You could also skin the potatoes if you prefer but my family enjoys them on the potatoes.
Next, add in the flour, salt and pepper and then the broth.
Reduce the heat and cover. Cook for 1 hour until the potatoes are soft and can easily be punctured with a fork.
You can use a stick blender or a potato masher to smooth out the potatoes. Blend until there are no more visible large chunks of potato or carrots left.
Add in the heavy cream and add salt and pepper to taste.
What to Pair With Sausage and Potato Soup
We love to top our soups with green onions, chives, cheese, croutons and even bacon!

Sausage and Potato Soup

Ingredients
- 1lb mild italian sausage
- 6 russet potatoes
- 2 carrots
- 4 cups of beef broth
- 1 cup heavy cream
- 1 tbsp butter
- 1 tbsp flour
- salt and pepper to taste
Instructions
In a cast iron dutch oven, heat the butter over medium to high heat.
Add in the sausage and onions and cook until the sausage is no longer pink and the onions are soft.
Dice the potatoes and carrots and them add into the dutch oven.
Add in the flour, salt and pepper and mix until everything is coated in the flour.
Add in the broth, stir, and then cover.
Reduce heat to low and simmer for 1 hour.
Remove the lid and use a stick blender or masher to smooth the potatoes.
Add in the heavy cream.
Add additional salt, pepper or other seasonings if desired or needed.
Serve.
