I love recipes where I can take just a few simple ingredients and turn them into something delicious in just a matter of minutes. I like to say that the easiest of recipes are usually the best.
What Makes Shortbread “Short”?
Shortbread gets the name short from the ratio of sugar to butter. The amount of sugar that you add to your shortbread should always be half the amount of butter. This lends to that wonderful, melt in your mouth sensation that shortbread is known for.
What Do I Need To Make Shortbread?
- Butter, room temperature
- White Sugar
- Flour
- Cornstarch
How to Make Simple Shortbread Wedges
Lighty grease, or line with parchment paper, a 9 x 9 square baking pan.
Using a hand mixer, or whisk attachment in a stand mixer, beat the butter and sugar together until it comes together in a light cream.
Add in the cornstarch and flour and whisk until it begins to form thick crumbs. You can use your hands to bring the crumbs together.
Place the dough into the baking pan and begin to pack it down tightly and evenly into the pan. Prick the surface of the dough with a fork.
Cover the pan and place into the fridge for up to an hour.
Begin preheating the oven to 350°F.
Remove the pan from the fridge and place into the oven once fully preheated.
Bake the shortbread wedges for 40 minutes. They should be a light golden brown when finished.
Allow to cool fully before cutting into wedges and serving.
What to Serve With Shortbread
Shortbread is best served with fresh, tart fruits and whipped cream. It also pairs well with ice cream and strawberry sauce!
