I have been working hard lately to make sure that I am getting the most out of all the foods that we cook and eat.

The other night we made bone-in smoked ham for dinner and after everyone had eaten their full, I was left with about 1lb of ham to work with. Instead of letting the ham go to waste, I decided to turn it into a delicious ham and split soup.

Do I have to use leftovers?

No, of course not! You don’t have to use left over ham for this recipe.

However, with the holiday season coming up, you may find yourself with more leftovers than you know what to do with! If you find yourself with a large surplus of leftover ham, this recipe is a great way to make use out of those delicious foods before they get pushed further and further into the back of the refrigerator.

What You Need to Make Ham and Split Pea Soup

Ham

Dried Split Peas

Broth, chicken or vegetable broth is best

Carrots

Celery

Onion

Garlic

Salt

Pepper

Fresh herbs like bay leaves, sage and thyme

How to Make Ham and Split Pea Soup

Start by preparing all the ingredients.

Chop the ham into small pieces, dice the onions and the carrots and celery. Mince the garlic into fine pieces.

Once all the ingredients are prepared, add them into a enamel coated cast iron dutch oven or large pot stock pot.

Pour in the broth, add the herbs and place the dutch oven on the stove over low to medium heat.

Cover the dutch oven and let the soup simmer for 1 hour until the soup has thickened and the peas have softened and begun to fall apart.

Use a stick blender to smooth the remaining soup.

Top with fresh herbs, croutons, or cheese and serve hot with a side of delicious, crusty sourdough bread.

Yield: 6 quarts of soup

Ingredients

  • 2lbs split peas
  • 1lb ham
  • 6 cups chicken or beef broth
  • 1 white onion
  • 2 carrots
  • 2 celery stalks
  • fresh thyme and sage
  • 2 tsp salt
  • 1 tsp pepper

Instructions

  1. In a large dutch oven, place the split peas, diced ham, chopped celery, onion and carrots, the fresh herbs and broth.
  2. Cover and let simmer for 1 hour, until the peas have softened.
  3. Use a stick blender to smooth out the remaining soup, add more broth or water if needed.
  4. Add salt and pepper to taste.
  5. Top with fresh herbs, croutons or cheese and serve alongside a toasted loaf of sourdough bread.
